Kugel is a word for a sweet or savory pudding. Here it is used as a sweet carrot pudding with great results. Did I mention that is is also gluten-free?
Serves: 8
1# carrots (8 medium), peeled, topped, and sliced in rounds
½ C. butter, softened
½ C. agave
2 eggs
1 tsp. vanilla
1 ½ C. almond meal (ground almond flour)
½ tsp. each ground cinnamon & nutmeg
¼ tsp. salt
Directions:
- Preheat oven to 350.
- Butter an 8X8 pan.
- Steam the carrots and roughly mash (to the size of small peas). Set aside to cool.
- Cream the butter and agave with a fork. Add the eggs and vanilla. Mix well.
- Add the almond meal, spices, and salt. Mix until half integrated. Add the carrots and fold in just until the batter is uniformly mixed.
- Smooth into the buttered pan.
- Bake 45-50 minutes.
