homemade strawberry fruit leatherI make my fruit leathers in an Excalibur dehydrator, but if your oven goes down to 135, you can make them in the oven too. These are two of my favorite flavors so far, but I will be making some more adventurous blends when the summer fruit ripens.

Strawberry-Banana Fruit Leather

1 # strawberries, topped
1 banana, peeled
1 ½ tsp. honey

Apple-Strawberry Fruit Leather

3 apples (about 3 C.), cored and chopped
1 C. strawberries, topped
1 ½ tsp. honey

Directions:

  1. Blend the ingredients until smooth.
  2. Line a drying tray with parchment or a drying sheet. Spread the blended fruit to make an even layer, about 1/8” thick.
  3. Dry at 135 degree for 6-8 hours.

Tips:

  • You should have between 2-3 cups of blended fruit from each recipe. An Excailbur tray will hold up to 4 C. of blended fruit.
  • Peeling the apples is optional, but I prefer to keep the skins on.
  • For me the apple-strawberry leather took 6 ½ hours to dry and the strawberry-banana took 8 ½ hours.
  • If you are using your oven, line a baking sheet with parchment paper or a baking mat.

The strawberry-banana puree is on the left and the apple-strawberry puree is on the right. You can see what different textures they have when blended. Be careful to not over-spread the strawberry-banana puree which is much thinner than the apple puree.
